Pan-Seared Salmon with Leeks and Mango

Method

  • Set the oven to 200 °C.
  • Slice the salmon fillet into serving portions, make small cuts on the skin, and pat the skin dry.
  • Sear the salmon fillets skin-side down in oil over high heat for 2 minutes, then transfer them to a greased baking sheet with the skin side up.
  • Sprinkle salt and pepper over the salmon and bake in the oven for 8 minutes.
  • Wash the leeks, and cut both leeks and mango into cubes.
  • Bring water to a boil with salt, add the leek cubes, and cook until tender.
  • Drain the cooking water and gently fold in the mango cubes.

Butter sauce

  • Finely chop shallots and simmer together with white wine. Reduce by half and then add heavy cream.
  • Cook until the sauce slightly thickens.
  • Whisk in small cubes of cold butter.
  • Keep the temperature just below boiling, ensuring the sauce does not boil.
  • Season the sauce with lemon juice, salt, and pepper.
  • Serve the salmon with leeks, mango, beurre blanc, salad, and boiled potatoes.
