Method

  • Start by slicing the rehydrated dried fish into thin strips.
  • Lightly sprinkle salt over the fish.
  • Then prepare the marinade for the fish.
  • Mix olive oil with juice and zest of lime.
  • Cover the fish and let it absorb the flavors and 'cook' into the fish.
  • Do this just before serving.
  • Serve the dried fish ceviche with thin slices of avocado and delicious fresh pomegranate seeds or with a fresh salad.
