Cod with cider-cooked barley and warm orange sauce

Method

  • Cut the cod into portions.
  • Grate the orange zest and mix with chopped thyme, salt, and flour.
  • Dredge the fish in the flour mixture and fry in oil over medium heat for 3-4 minutes on each side.

  • Cook the barley in apple cider for about 15 minutes until tender.
  • Cut the apple into small dice.
  • Season with salt and pepper, and stir in the apple dices just before serving so they become warm but not soft.
  • Stir in arugula salad just before serving.

Sauce

  • Combine orange juice, olive oil, vanilla sugar, salt, and cayenne pepper in a saucepan and heat gently. The sauce must not boil.
  • Stir in chopped parsley just before serving.
  • Serve the cod with barley and orange sauce.
