Nachos with cod

Ingredients

Avocado Cream

Method

Pickled red onion

  • Mix all the ingredients, except the red onion, in a saucepan.
  • Bring to a boil, then let it simmer for 3–4 minutes.
  • Let it rest for 30 minutes afterward.
  • Place the red onion slices in a large jar, and pour the brine over them until fully submerged.
  • Put on the lid and store in the refrigerator.
  • The fish is ready to eat after approximately one hour.

Avocado Cream

  • Puree the avocado and remaining ingredients with an immersion blender. For a thinner consistency, add a little more olive oil and lemon juice.

Cod

  • Season the cod fillet with salt, pepper, and spices, then cook in a pan for 2-3 minutes on each side.

Serving

  • Arrange a plate with nachos, cod, pickled red onion, avocado slices, yellow bell pepper, green bell pepper, coriander, and chili. Top with avocado dressing and lime juice.
