  • Set the oven to 200 °C.
  • Remove the skin from the cod fillets, sprinkle with salt, and let rest for about 10 minutes.

  • Cut potatoes and red onions into wedges, carrots and celeriac into sticks, parsley root into thick slices, beetroot into cubes, and shallots in two.
  • Place the vegetables in a greased ovenproof dish, pour over water, and sprinkle with bouillon powder, salt, and pepper.
  • Bake the vegetables in the middle of the oven until almost tender, about 10 minutes.
  • Place the cod fillets over the vegetables and continue baking until the fish is fully cooked, about 5 minutes.
  • Serve with fresh herbs sprinkled on top.
