  • Cut mango, bell pepper, carrot, and avocado into thin strips.
  • Rinse the cilantro and let it dry on paper towels.
  • Immerse a rice paper sheet in water for about 10 seconds and let it drain slightly.
  • Add some shrimp, vegetables, and cilantro, fold in the sides, and roll tightly.
  • Repeat until all ingredients are used.

Peanut Sauce

  • Grate ginger, and finely chop garlic and chili.
  • Mix all sauce ingredients except the whole peanuts. The sauce should have a coarse and slightly thick consistency.
  • Roughly chop the peanuts and sprinkle over the peanut sauce before serving.
