Asian Fish Stew

Method

  • Set the oven to 200 °C.
  • Slice the salmon into serving pieces.
  • Cut carrots and zucchini into thin sticks and place in a greased ovenproof dish.
  • Place the salmon pieces over the vegetables.
  • Finely chop the garlic and grate the ginger, then mix with the other ingredients for the sauce.
  • Pour the sauce over the salmon and vegetables, and bake in the oven for about 15 minutes.
  • Serve the salmon stew with barley rice on the side, and optionally sprinkle with fresh coriander if you have some.
