Homemade Haddock Cakes

These homemade pollock fish cakes, also called pollock patties or pollock cakes, are a simple and delicious dinner the whole family will enjoy. Method

Cut the haddock into strips and process in a food processor together with the salt.
Mix in potato starch, chopped chives, and pepper, then gradually add milk until a firm paste forms.
Shape large patties and fry them in butter over medium heat until golden brown and fully cooked, about 3 minutes on each side.

Carrot Purée

Cut carrots into small cubes and thinly slice sugar snap peas.
Simmer the vegetables in lightly salted water until tender.
Drain the cooking water, but save it.
Bring the vegetable water to a boil. Whisk together flour and double cream, then stir it into the vegetable water.
Let the sauce simmer gently for 4-5 minutes.
Add the vegetables and heat through thoroughly.
Serve the haddock cakes with the carrot purée and potatoes on the side. Garnish with chopped chives sprinkled over.
