  • Set the oven to 200 °C.
  • Slice the salt cod into strips and cook the pasta according to the package instructions.
  • Cut the onion in half, finely chop one half, and slice the other half into rings.
  • Finely chop the garlic and onion, and sauté in hot oil in a saucepan.
  • Add the salt cod and olives to the saucepan, sauté for 2 minutes, then set aside.
  • Melt butter in another saucepan, stir in flour, and gradually whisk in some milk at a time.
  • Stir well, add bay leaves, and let the sauce simmer on low heat for 20 minutes, stirring occasionally.
  • Add cream, bring to a boil, and remove the bay leaves.
  • Grate Parmesan cheese, and add half of it along with finely chopped parsley into the sauce.
  • Add the salt cod, onion, garlic, olives, and cooked pasta, and season with salt and pepper to taste.
  • Pour the mixture into a greased ovenproof dish, garnish with onion and tomato slices, and drizzle with a little olive oil.
  • Sprinkle the remaining Parmesan cheese over and bake in the oven for about 10 minutes.
  • Serve the salt cod with bread on the side.
