  • Light up the grill or oven. Grill or roast the red pepper until it becomes soft. Remember to turn them frequently so they don't burn. Depending on the heat, this takes about 10 minutes.
  • Mix the spices and season the mackerel fillet with the blend of sumac/lemon zest, chili flakes, salt, and pepper.
  • Drizzle a few drops of olive oil over both sides of the fillet before cooking, then grill or fry the fish for 2-3 minutes on each side. Start with the skin side down.
  • Split the baguette in two, but keep the top and bottom preferably closed. Warm the bread slightly on the grill or in the oven before adding grilled peppers, mackerel, a little lemon juice, some salad greens, and slices of tomato and red onion. Finish it off with a small dollop of mayonnaise before pressing the baguette or bread slices together to keep everything in place.
