Baked Bouillabaisse

Method

  • Preheat the oven to 125°C (257°F).
  • Cut salmon and cod into approximately 2 cm cubes and place the pieces in a greased ovenproof dish.
  • Cut bell peppers into pieces, and thinly slice the onion and garlic; sauté in a little oil until the onion is translucent.
  • Stir in cumin, saffron, and ground fennel, and continue sautéing for about 30 seconds.
  • Add canned tomatoes and water, then season with salt and pepper.
  • Pour the mixture over the fish in the dish and bake in the oven for about 15 minutes.
  • Serve with bread and aioli alongside.
