Mediterranean-style Hake

Ingredients

Vegetable Ragout

Method

  • Set the oven to 200 °C.
  • Cut the hake fillet into serving portions and spread a thin layer of pesto on each piece.
  • Wrap each piece of fish with serrano ham and place them in a greased ovenproof dish.
  • Bake for approximately 12-15 minutes.

Mashed Potatoes

  • Peel potatoes and boil together with garlic until everything is tender.
  • Drain the water, mash the potatoes and garlic, then add egg yolk and mix well.
  • Stream in olive oil and add milk gradually until a smooth purée is achieved.
  • Season with salt and pepper to taste.

Vegetable Ragout

  • Dice the vegetables and lightly sauté them in oil in a frying pan.
  • Add balsamic vinegar, stir in butter, and season with salt and pepper.
  • Serve the hake on a bed of vegetables with the potato purée on the side.
