Bruschetta with Pepper-Roasted Arctic Char

Bruschetta consists of toasted bread slices spread with garlic and oil. They can be topped with almost anything, limited only by your imagination. All our recipes are sourced from godfisk.no

Bruschetta

Tomato Concassé

Method

  • Set the oven to 200 °C.
  • Crush the peppercorns in a mortar and discard the hard shells.
  • Mix pepper and salt, then sprinkle over the fish fillets.
  • Bake in the oven for about 6 minutes, then remove and cut into serving-sized pieces.

Bruschetta

  • Cut the baguette at a slight angle to create equally large slices.
  • Grate garlic and mix with olive oil.
  • Brush the baguette slices with the oil and place them on a baking sheet.
  • Bake until they turn slightly golden, about 4 minutes.

Tomato Concassé

  • Make a cross cut on top of each tomato and place in boiling water.
  • Cook until the skin begins to loosen, then transfer to ice water and remove the skin.
  • Cut in half, remove the core, and dice the tomato flesh.
  • Finely chop the garlic, tear the basil, and mix with the diced tomatoes.
  • Season with salt and pepper to taste.
  • Spread the tomato concasse over the bruschetta and top with a piece of fish. Garnish with basil leaves.

Tip:You can also top the bruschetta with other types of fish, such as cod or haddock.
