  • Preheat the oven to 200°C.
  • Mix all ingredients for the marinade. Cut the salmon into cubes, coat well in the marinade, and let sit for at least 15 minutes. Save some marinade for serving if desired.
  • Mix the cooked rice with soy sauce and sesame oil. Spread the rice evenly on a baking sheet lined with parchment paper and bake in the middle of the oven for 20–25 minutes. Stir a couple of times during baking.
  • Bake the salmon pieces in the oven at 200°C for about 10 minutes, or in an air fryer for 6–7 minutes. You can cook them at the same time as the rice, but place the salmon on a separate tray on the top rack.
  • Mix the crispy rice with the beans, carrot, spring onion, and cucumber in serving bowls. Feel free to drizzle some of the remaining marinade over the ingredients.
  • Serve topped with the salmon pieces, chili mayo, and sesame seeds.
