Emilie's Ocean Cod with Asian Vegetables and Peanuts

Method

  • Preheat the oven to 180°C. Place the fillets in an appropriate ovenproof dish and lightly season with salt and pepper.
  • Coarsely chop the chili. Mince the garlic, then combine chili, garlic, soy sauce, fish sauce, lime juice, water, sugar, sesame oil, and cilantro using an immersion blender.
  • Spread about half of the sauce over the cod. Finely chop the lime leaves and add them to the remaining sauce for more flavor. Place the dish in the middle of the oven and bake at 180°C for about 20 minutes or until the fish flakes easily with a gentle press.

  • Prepare the broccoli by cutting into small florets. Slice the garlic thinly. Heat a large frying pan with a little oil and sauté the vegetables for a couple of minutes over high heat.
  • Add a splash of water and let it evaporate before mixing in oyster sauce and sesame seeds.
  • Cut the heart of palm lettuce into wedges and lightly sauté in a pan with a little oil.
  • Cook rice noodles according to the package instructions.

Serving

  • Serve the baked cod in the dish or plate with rice noodles, vegetables, and the cod fillet. Top with the remaining sauce, peanuts, sliced scallions, and chopped cilantro.
