Fish Stew with Salmon and Vegetables

  • Cut the salmon into approximately 3 cm pieces.
  • Wash, clean, and finely chop shallots and garlic.
  • Wash, peel, and cut potatoes, carrots, and spring onions into pieces, about 1 cm in size.
  • Wash, clean, and divide broccoli into small florets.
  • Sauté onions and garlic in liquid margarine in a pot until the onions are soft.
  • Add potatoes, carrots, spring onions, and broccoli.
  • Add water and fish stock.
  • Cook until the vegetables are just tender.
  • Add heavy cream and cornstarch slurry, then bring to a boil.
  • Season with salt and pepper to taste.
  • Add the salmon pieces to the pot and simmer until cooked through, about 5 minutes.
  • Finely chop parsley and sprinkle over before serving.
  • Serve the stew with bread on the side.
