Fish Cake with Mackerel

Method

  • Cut the mackerel into smaller pieces and process together with salt, pepper, potato starch, thyme, and milk until you get a coarse paste in a food processor.
  • Shape the paste into flat fish cakes and fry them in a mixture of liquid margarine and oil, about 2 minutes on each side.
  • Fry the bacon until crispy.
  • Slice the red onion into rings and the tomato into slices.

Dressing

  • Mix egg yolk and lemon juice to make the dressing.
  • Place the bowl over a water bath and stir until the mixture thickens.
  • Stir in sour cream and season with salt and pepper.
  • Place a fish cake, bacon, red onion, tomato, and salad on a slice of bread, then top with another slice. Serve with the dressing.

Tip:You can use other bread, such as focaccia.
