Deep-fried Arctic char with beetroot salad

Method

  • Rinse the Arctic char fillet in cold water, pat dry with paper towels, and cut into approximately 5 cm pieces.
  • Lightly whisk the eggs in a bowl, and mix flour, salt, and pepper on a plate.
  • First coat the fish pieces in the flour mixture, then dip in the beaten eggs, and finally in bread crumbs.
  • Heat oil to 180 °C, preferably using a deep fryer, and fry the fish pieces until golden, about 2 minutes.
  • Remove the pieces and place them on paper towels to drain.

Beetroot salad

  • Cook beets until tender, peel them, and coarsely grate on a grater.
  • Coarsely chop capers and garlic.
  • Mix mayonnaise and yogurt, and season with salt and pepper.
  • Add beets, capers, and garlic to the dressing and gently combine.
  • Serve deep-fried Arctic char with beetroot salad and lemon wedges.

Tip:If you don't have a thermometer, you can check if the oil is hot enough by lowering the handle of a wooden spoon into the oil. If bubbles form around the handle, the oil is hot enough.
