Cured Trout with Honey and Aquavit

Method

  • Place the trout on a board or tray with sides, skin side down. Sprinkle with salt and pepper. 

Herb mixture

  • Crush coriander seeds, finely chop dill, and mix with honey, aquavit, and sugar.
  • Spread the herb mixture over the trout fillet.
  • Cover with plastic wrap and let it sit for several hours in the refrigerator.
  • Turn the trout with the skin side up, and let it marinate in the refrigerator for 2 days before serving.

Dressing

  • Mix together mustard and egg yolk, then slowly add the oil while stirring constantly until a thick consistency is achieved.
  • Add crème fraîche, chopped capers, and dill, then season with salt, pepper, and lemon juice.
  • Serve the cured trout in thin slices on small toast pieces, with dressing on top.
