Grilled Lobster with Herb Butter

  • Preheat the oven to 180 °C.
  • Place the lobster on its back and cut from the middle out towards the tail tip with a sharp, heavy knife. Then, cut from the middle forward towards the head.
  • Crush the claws with the back of a knife. Remove the stomach located in front of the head, and the intestine running along the back.
  • Finely chop shallots, garlic, fennel, and basil, and squeeze the juice from the lemon.
  • Mix these with room-temperature butter, egg white, and pepper. Use an immersion blender if preferred.
  • Spread the herb butter over the lobster tail meat and place it on a baking sheet with the shell side down.
  • Grill the lobster in the oven for 7 minutes.
  • Serve with salad and bread.
