Grilled salmon in foil with asparagus

Method

  • Boil potatoes.
  • Thinly slice fennel and place in ice water. It will become extra crunchy.
  • Lay out double sheets of foil and place a few slices of lemon on top. Place the salmon piece on top.
  • Sprinkle with dried herbs, a little oil or butter. Wrap it up and place on the grill.
  • Check after 5 minutes and leave until cooked through but still juicy.
  • Peel the asparagus and grill until tender, about 2 minutes per side. You can also blanch them instead of grilling.
  • Serve the salmon packets with potatoes with butter and dill, delicious asparagus topped with fennel, and preferably some sour cream or aioli. Season with salt and pepper to taste. Simple but a festive dinner worthy of any celebration.
