  • Scrape the salmon skin well, rinse and dry with paper towels. Sprinkle salt on the flesh side of the fillet and let it sit for about 10 minutes.
  • Place the salmon on a piece of buttered aluminum foil and sprinkle with coriander seeds.
  • Finely chop chili, lemongrass, and mint. Squeeze the juice and grate the zest of the lime, then mix with honey, chili, lemongrass, and mint. Spread the mixture over the salmon fillet.
  • Fold the foil around the salmon and place on the grill for about 15 minutes. Cover with a lid if you have one.
  • Open the foil and sprinkle with finely chopped coriander before serving.

Potato Salad

  • Boil the potatoes, cool and cut into cubes.
  • Clean the spinach and tear it into pieces.
  • Slice radishes, finely chop red onion, and tear fresh coriander leaves.
  • Mix sour cream, mayonnaise, coriander leaves, and grated horseradish. Taste and add more horseradish if desired.
