Method

  • Coarsely chop hazelnuts, and mix with honey, apple cider vinegar, and olive oil.
  • Taste the dressing with salt, pepper, and a little sesame oil.
  • Gently mix the dressing into the salad.
  • Serve grilled pollock and potatoes alongside the salad.
  • Mix the lime zest and juice with chili, lemongrass, and mint, then spread the mixture over the pollock.
  • Fold the aluminum foil around the pollock and grill for about 15 minutes, covering if the grill has a lid.
  • Brush the potatoes with a little oil and grill them on both sides.
  • Open the foil with the pollock and sprinkle with chopped cilantro before serving.

  • Tear the lettuce and roughly chop the parsley.
  • Finely chop the red onion, and dice the cucumber and apple.

Dressing

  • Coarsely chop the hazelnuts, then mix with honey, apple cider vinegar, and olive oil.
  • Season the dressing with salt, pepper, and a touch of sesame oil.
  • Gently fold the dressing into the salad.
  • Serve the grilled saithe and potatoes alongside the salad.
