Method

  • Preheat your oven to 175°C (347°F).
  • Cut the haddock into strips. If you don't have haddock, you can also use cod.
  • Beat the eggs and place them in a deep plate.
  • Grind the almonds. Mix ground almonds with salt and pepper, and place the mixture in a deep plate.
  • Dip the fish strips in the egg, then in the almond mixture. Place them on a baking sheet lined with parchment paper.
  • Bake the fish sticks in the oven for about 25 minutes. Feel free to flip them halfway through cooking.

Coleslaw

  • Cut the cabbage into small pieces, grate the ginger, and finely chop the parsley.
  • Place the cabbage in a saucepan, pour in the orange juice, and stir in the ginger and sugar.
  • Bring to a boil and let simmer until the cabbage is tender, about 10 minutes.
  • Stir in the butter and season with salt, pepper, and parsley.

Serving

  • Serve the fish sticks with the cabbage and barley rice, and garnished with parsley if desired.
