Salted Cod with Crispy Potatoes

Method

  • Preheat the oven to 180 °C.
  • Cut the dried salt cod into serving pieces.
  • Mix together olive oil and crushed garlic, place the salted cod pieces in the mixture, and let them marinate for about 20 minutes.
  • Remove the salted cod from the mixture and let the excess oil drain off.
  • Cook the salted cod pieces in a frying pan for about 3 minutes on each side.

Roast Potatoes

  • Wash the potatoes, cut them into wedges, dry them, and place them in an ovenproof dish.
  • Toss the potato wedges in olive oil and sprinkle with coarse salt.
  • Bake in the oven for approximately 20 minutes.

Salad

  • Wash the romaine lettuce and chop it.
  • Cut cucumber and orange into chunks, and thinly slice red onion.
  • Finely chop parsley and mix it with the other salad ingredients.

Dressing

  • Toast walnuts in a dry skillet until golden, then crush them roughly with your hands.
  • Combine apple cider vinegar, honey, and cold-pressed olive oil.
  • Add the crushed walnuts and season with salt and pepper to taste.
  • Pour the dressing over the salad and toss well.
  • Serve salted cod with crispy potatoes and side salad.
