  • Heat oil to 160 °C in a deep fryer or pot.
  • Mix crab meat with finely chopped shallots, then combine with Tabasco, sweet chili sauce, egg, breadcrumbs, and cornstarch binder.
  • Season with salt and pepper to taste.
  • Dampen your hands with cold water and roll small balls, then fry until golden and thoroughly cooked in the oil. Let them drain on paper towels.
  • Serve the crab balls with sweet chili sauce and lime wedges on the side.

Tip:Always have a lid ready in case the oil catches fire, so you can smother the flames with the lid. Never pour water on burning oil.
