Crab Salad with Asparagus Beans and Saffron Dressing

  • Remove the meat from the crab claws.
  • Finely chop cilantro, shallots, ginger, and chili, and mix with the crab meat.
  • Grate lemon zest and add lemon zest and lemon juice to the crab salad.
  • Toast the baguette slices until golden and crispy in a dry skillet.

Dressing

  • Dice the apple and crush the saffron.
  • Combine the ingredients for the dressing and let it sit to infuse for about 20 minutes before serving.
