Crab Soup

A soup can be made in many ways, and in this recipe, the crab and vegetables are added at the time of serving. Vegetables tossed in herb oil provide extra flavor. All our recipes are sourced from godfisk.no

Ingredients

Herb oil

Method

  • Clean the crab claws and extract the meat.
  • Cut the carrots, parsley root, and the white part of the leek into thin strips.
  • Simmer fish stock, white wine, and heavy cream until about two-thirds reduced, or until the broth is rich and flavorful.
  • Briefly blanch the vegetables in lightly salted water, then drain thoroughly.

Herb oil

  • Finely chop parsley and dill, then whisk together with olive oil and salt.
  • Toss the vegetables in the herb oil.
  • Serve the soup in warm bowls, add crab meat and vegetables, and drizzle with a little olive oil on top.

Tip:The herb oil can be stored in an airtight jar in the refrigerator for at least one week.
