Halibut with Ginger Butter

Method

  • Slice the halibut into portions and cut the lemon into slices.
  • Bring water to a boil with lemon slices, bay leaves, pepper, and salt.
  • Add the halibut pieces and let them simmer on low heat until just cooked through, about 6-10 minutes.
  • Remove the halibut from the water and peel off the skin.

Ginger Butter

  • Grate the ginger and finely chop the chives.
  • Mix the grated ginger and chopped chives into room-temperature butter.

Side Dishes

  • Finely chop shallots.
  • Cook the asparagus in lightly salted water for 3 minutes, then transfer to ice water for half a minute.
  • Sauté shallots in butter over low heat until translucent, then fold in the asparagus.
  • Serve the halibut with ginger butter, asparagus, and boiled potatoes.
