Salmon with Chanterelle Mushrooms

Oven-baked salmon in individual portions. Easy to prepare, easy to serve. Mashed potatoes and sautéed chanterelles are delightful accompaniments in this recipe. All our recipes are sourced from godfisk.no

Method

Mashed Potatoes

  • Peel the potatoes, cut into cubes, and boil until tender.
  • Drain the cooking water, add butter and milk, and mash the potatoes into a smooth purée.
  • Season with salt and pepper to taste.

Chanterelle Mushrooms

  • Clean the chanterelles and sauté in butter until they turn golden brown.
  • Sprinkle with salt and pepper.

Oven-baked salmon

  • Preheat the oven to 150 °C.
  • Cut the salmon fillet into serving portions and place each piece on a sheet of baking paper.
  • Sprinkle with salt and pepper, then top with a slice of lemon and a sprig of rosemary.
  • Distribute white wine into the packages, fold the paper together, and tie the top with cotton twine.
  • Place the packages on a baking sheet and bake in the oven for approximately 10 minutes.
  • Serve the salmon with mashed potatoes and chanterelles on the side.

Tip:You can also substitute with another mushroom if chanterelles are not available.
