Salmon with Creole Flavor

  • Sprinkle the salmon fillet with coarse salt and let it sit for about 10 minutes.
  • Rinse off the salt, pat the fish dry, and cut it into portions.
  • Scald the tomato by making a cross cut on the top, immersing it in boiling water for a few minutes, then transferring it to cold water. Peel off the skin, remove the seeds, and cut the flesh into cubes.
  • Dice the onion, garlic, and bell peppers, and sauté in butter until the onion is translucent and soft.
  • Stir in tomatoes, dried thyme, paprika, salt, Tabasco, and fish stock.
  • Let the sauce simmer gently for 10-15 minutes, then thicken with cornstarch.
  • Taste and adjust with more Tabasco if needed; the sauce should be full of flavor.
  • Place the salmon pieces in the sauce and let them simmer covered until just cooked through, about 8 minutes.
  • Serve with salad and rice on the side.
