Salmon Skewers with Greek Salad

Grilled salmon skewers are just as simple as they are popular. If summer and grilling season are still a while away, there's nothing stopping you from pan-frying the salmon skewers. All our recipes are sourced fromgodfisk.no

Method

Greek Salad

  • Cut tomatoes, cucumbers, and feta cheese into cubes, and thinly slice shallots.
  • Mix in olives and finely chopped oregano, then drizzle olive oil over the salad.

Tzatziki

  • Peel the cucumber, cut it lengthwise, scoop out the seeds with a spoon, and grate it coarsely.
  • Sprinkle a little salt over the cucumber and let it rest for 15 minutes before draining the excess liquid.
  • Finely chop garlic and mix it with the other ingredients for the tzatziki.
  • Season with salt and pepper to taste.

Salmon Skewers

  • Preheat the grill.
  • Cut the salmon fillet into large cubes and thread four cubes onto each skewer.
  • Mix fennel, cloves, chili powder, and salt thoroughly, then roll the salmon skewers in the spice mixture.
  • Grill the salmon skewers for 2 minutes on each side.
  • Warm the pita bread slightly on the grill just before serving.
  • Serve the salmon skewers with pita bread, Greek salad, and tzatziki on the side.

Tip:If you are using wooden skewers, soak them in water for about 30 minutes before use.
