Salmon Fillet with Vegetables

Mashed Potatoes

  • Peel and cut the potatoes into chunks, then boil until tender in lightly salted water for about 15 minutes.
  • Drain the cooking water, add milk and butter, and mash until smooth.
  • Season with salt and pepper to taste.

Salmon Parcel

  • Preheat the oven to 150 °C.
  • Cut the salmon into individual portions, and slice the leek and carrot thinly.
  • Cut the parchment paper into pieces approximately 25×25 cm.
  • Distribute the leek, carrot, and sugar snap peas in the center of each piece of parchment, then place the salmon on top.
  • Drizzle with olive oil, lemon juice, and dill, then season with salt and pepper.
  • Fold the parchment paper around the salmon and vegetables to form a tight package.
  • Bake in the middle of the oven for 10-15 minutes.
  • Serve the salmon parcel with mashed potatoes and lemon on the side.

Tip:Instead of parchment paper, aluminum foil can also be used for the salmon parcels.
