Salmon Soup with Root Vegetables

Method

  • Cut the salmon into cubes and season with a little salt and some of the curry powder.
  • Dice the potatoes, carrots, and rutabaga, and slice the onion and cut the leek into pieces.
  • Sauté the onion in oil and add the rest of the curry powder.
  • Add the potatoes, carrots, and rutabaga, sauté for a bit longer, and pour in fish stock.
  • Cook until the vegetables are tender, then add the salmon and leek, and let the soup simmer for a few minutes.
  • Season with salt and pepper to taste.
  • Serve the soup with traditional flatbread on the side.
