Seared Scallops with Sweet Chili Sauce

4 pcs scallops
0.5 stalk spring onion

Butter sauce

0.5 pcs lemon
4 tbsp butter
4 tbsp sweet chili sauce
lime juice
salt

Method

Preheat the oven to 250°C.
If you are using fresh scallops, start by opening and cleaning the shells.
Clean, rinse, and dry the shells, and place a scallop muscle in each shell. Finely chop the spring onions.

Lemon Butter

Squeeze the juice of a lemon.
Bring it to a boil and add half of the butter.
Cool slightly and vigorously stir in the rest of the butter, then season with salt.
Add spring onions, lemon butter, sweet chili sauce, and a squeeze of lime juice to the scallops, and sprinkle with salt.
Bake in the middle of the oven until the butter bubbles, about 1 minute. The scallops can have a slightly raw center if desired.
Serve the scallops immediately after cooking.
