  • Preheat the oven to 180 °C.
  • Place the salmon fillets in an ovenproof dish with olive oil.
  • Season the salmon with a little salt and pepper, then pour over the soy sauce.
  • Add grated lemon zest and lemon juice, then bake in the oven for about 10-12 minutes.

Salad

  • Chop the salad greens, spring onions and apple.
  • Cut the avocado in half and scoop out the flesh with a spoon. Cut the flesh into pieces.
  • Toss the spring onions, apple, salad greens and avocado together.
  • Mix lemon juice, olive oil, and sea salt, then fold into the salad.
  • Serve the salmon with the salad greens and rice on the side if desired.
