Lightly Grilled Salmon Slices with Pomegranate

Method

  • Set the oven to grill mode on high heat.
  • Slice the salmon thinly and arrange on plates. Sprinkle with a little salt and pepper.
  • Quickly grill the salmon slices under the top grill element in the oven so they receive just a bit of heat from above, about 20-30 seconds.

Sauce

  • Finely chop the garlic and sauté until golden in butter.
  • Add soy sauce and season with lemon juice.
  • Remove the seeds from the pomegranate and stir them in just before serving.

Vegetables

  • Slice fennel and radish thinly, and cut carrots into strips.
  • Combine the vegetables with olive oil and season with salt and pepper.
  • Pour the sauce over the salmon slices and serve with the vegetables.
