Nut Coated Salmon

Method

  • Cut the salmon into pieces about 3 cm wide and sprinkle with a little salt.
  • Chop the almonds coarsely and finely chop the coriander.
  • Mix almonds, coriander, sesame seeds, and pepper, and warm the mixture in a frying pan.
  • Remove the nut mixture from the pan and press one side of the salmon into the mixture.
  • Fry the salmon in oil for about 3 minutes.

Vinaigrette

  • Dice the mushrooms and fry in butter until golden brown.
  • Add vinegar and water, and cook for 10 minutes.
  • Blend the mixture until smooth to form a sauce.
  • Warm the shallots in the vinaigrette.
  • Serve the nut-coated salmon with the vinaigrette, shallots, and cherry tomatoes.
