Rainbow Trout and Potato Wedges in Airfryer with Creamy Cucumber Salad

Method

  • Cut the potatoes into wedges, toss with oil, and season with salt. Bake the potatoes for 15 minutes at 180°C, or until fully cooked. You may need to experiment to find what works best in your airfryer, as it can vary slightly.
  • Let the potatoes rest while you prepare the trout and broccolini.
  • Pat the trout fillet dry with paper, and brush with oil. Season with salt and pepper. Cook together with the broccolini at 160°C for 8 minutes, or until the fish flakes easily.
  • Peel most of the cucumber skin. Slice the cucumber lengthwise and scoop out the seeds with a spoon. Cut the cucumber into small pieces.
  • Finely chop shallots, garlic, and herbs, and place in a bowl.
  • Add sour cream and mayonnaise, and season with salt and pepper. Fold in the cucumber last.
  • Serve juicy trout with crispy potato wedges and a fresh cucumber salad.
