Raw Oysters

Method

  • Thoroughly wash and scrub the flat oysters.
  • Place the oyster in a napkin with the pointed end facing towards you.
  • Insert the knife into the hinge between the shells.
  • Press and cut over the adductor muscle, which is located slightly inward from the edge.
  • Gently pry open the shell, taking care that the oyster liquor does not spill out.
  • Serve the oysters on ice with lemon, lime, salt, pepper, and a bit of cayenne pepper.

Tip:An oyster knife is a useful tool for opening oysters.
