Oven-baked monkfish with mashed potatoes

Ingredients

Marinade

Method

  • Set the oven to 200 °C.
  • Cut the fish into serving pieces.
  • Finely chop the garlic, tarragon, chives, and parsley, and squeeze the lemon juice.
  • Mix the ingredients for the marinade, and let the fish sit in it for about 30 minutes.
  • Cut the zucchini, mushrooms, and bell peppers into pieces, and place them in a greased ovenproof dish.
  • Place the marinated fish on top and spread the marinade over the vegetables and fish.
  • Bake in the oven for about 20 minutes.

  • Peel the potatoes, cut into cubes, and boil in unsalted water until tender.
  • Mash the potatoes, then stir in butter and milk to achieve the desired consistency.
  • Season with salt and pepper to taste.
  • Serve oven-baked monkfish with mashed potatoes. Feel free to garnish with some chopped chives.
