Oven-baked tusk with vegetables and tomato salsa

Method

  • Preheat the oven to 180 °C.
  • Cut the hake into serving pieces.
  • Brush the pieces with olive oil, and sprinkle salt and pepper over them.
  • Bake in the oven for 12-15 minutes.

Vegetables

  • Cut shallots into thin strips, spinach into coarse strips, finely chop garlic, and cut the Brussels sprouts into quarters.
  • Coarsely chop walnuts, lightly toast them in a dry skillet, and let them cool.
  • Sauté shallots, garlic, and Brussels sprouts in a pan with olive oil until the Brussels sprouts are slightly browned, about 3-5 minutes.
  • Add spinach and cover, letting it steam for a couple of minutes until the spinach has wilted.
  • Fold in walnuts, and finish with balsamic vinegar, salt, and pepper.

  • Dice tomatoes and red onions into small cubes. Mix all ingredients for the tomato salsa.
  • Serve the tusk with the vegetables and tomato salsa, preferably with a sprinkle of parsley on top.
