  • Preheat the oven to 180 °C.
  • Slice red onion, carrots, and celery into thin strips, and break the broccoli into small florets.
  • Place the vegetables in a greased ovenproof dish and sprinkle with a little salt.
  • Mix fish stock and heavy cream, pour it over the vegetables, and bake in the middle of the oven for 10 minutes.
  • Remove the dish from the oven and place the halibut fillet over the vegetables.
  • Finely chop the garlic, and add it over the fish along with salt, pepper, and olive oil. Continue baking for about 12 minutes.
