Oven-Roasted Halibut

Method

  • Preheat the oven to 165°C (329°F).
  • Wash and clean the halibut. Cut off the head and the outer part of the tail, and remove the fins.
  • Insert a meat thermometer into the thickest part of the fish close to the bone.
  • Place the halibut on a baking sheet lined with parchment paper and bake in the oven for 25-40 minutes, depending on size.
  • Remove the fish when the thermometer reads 48°C (118°F) and let it rest on the counter for 5-10 minutes, until the temperature reaches 52°C (126°F).
  • Squeeze the juice of a lemon.
  • Remove the skin from the halibut, brush with lemon juice, and season with salt and pepper.

Parsley Butter

  • Blend parsley and garlic into a purée, gradually adding sunflower oil while blending.
  • Add grated Parmesan and butter, and blend until the butter is well mixed.
  • Roll the herb butter into a sausage shape using a piece of parchment paper, and chill until ready to serve.
  • Serve the oven-baked halibut with parsley butter, vegetables, and boiled potatoes.
