Oven-Baked Salmon with Parmesan Crust and Tomato Salad

Method

  • Preheat the oven to 180 °C.
  • Cut the salmon fillet into serving portions, sprinkle with salt, and place in a greased ovenproof dish.
  • Drizzle with olive oil. Finely grate the Parmesan cheese and sprinkle over the salmon.
  • Bake in the oven for about 15 minutes.

Tomato Salad

  • Cut the tomato into wedges, red onion into thin slices, and cucumber into cubes.
  • Mix olive oil and balsamic vinegar, and season with a little salt and pepper. Pour the dressing over the vegetables and toss well.
  • Serve the salmon with the tomato salad and cooked pasta.
