Oven-Baked Trout with Apple and Beetroot Salad

Method

  • Set the oven to 80 °C.
  • Cut the trout fillet into small pieces. Brush a baking sheet with olive oil, spread the trout pieces evenly, and sprinkle with salt.
  • Grate lemon zest and sprinkle over the trout. Also, squeeze lemon juice to use in the salad.
  • Bake the trout in the oven until it reaches an internal temperature of 42°C, approximately 10 minutes.

Apple and Beetroot Salad

  • Wash the apple and slice it, cut the beetroot slices in half.
  • Quickly toast the walnuts in a dry and warm skillet.
  • Mix the salad with lemon juice.

Serving

  • Arrange the salad, apple slices, beetroot slices, and walnuts on a plate. Top with the trout and serve.
