Oven-baked pollock with green lentils

Lentils

Mint Yogurt

Method

  • Preheat the oven to 225°C.
  • Cut the pollock into serving pieces, drizzle with olive oil, and sprinkle with salt and garam masala.
  • Place the fish pieces on parchment paper on a baking sheet and bake on the top rack in the oven until fully cooked and lightly browned on top, about 10 minutes.

Lentils

  • Rinse the lentils.
  • Cook the lentils until tender in unsalted water for about 15-20 minutes.
  • Drain the cooking water.
  • Finely chop the garlic and squeeze the lemon juice.
  • Mix garlic and lemon together with the lentils, and season with salt.

Mint Yogurt

  • Finely chop mint and flat-leaf parsley, and fold into the yogurt.

Serving

  • Serve the oven-baked pollock with lentils and mint yogurt on the side.
