Oven-Baked Cod in Tomato Sauce

A delicious dish of oven-baked cod fillet served with a homemade fresh tomato sauce infused with garlic and a hint of chili. Serve with rice for a wonderful dinner for the entire family. You can also use coalfish in this recipe. All our recipes are sourced fromgodfisk.no

Method

  • Set the oven to 200 °C.
  • Cut the cod fillet into serving pieces and sprinkle with salt.

Tomato Sauce

  • Coarsely chop the onion, slice the garlic thinly, cut the bell pepper into pieces, and finely chop the chili.
  • Sauté the onion and garlic in oil until the onion is translucent.
  • Add the bell pepper, chili, canned tomatoes, and basil, and cook for a couple of minutes.
  • Season with salt and transfer to an ovenproof dish.

Oven Baking

  • Place the fish pieces in the sauce and squeeze a little lemon over them.
  • Cover the dish with aluminum foil and bake in the oven for about 20 minutes.
  • Serve with rice on the side.
