Baked Cod with Bacon Medallions and Pesto

Method

  • Preheat the oven to 180 °C.
  • Cut the cod into evenly-sized pieces and sprinkle with salt, then let them rest for about 20 minutes.
  • Rinse off the salt and pat the pieces dry with paper towels.
  • Place them in an ovenproof dish.

pesto

  • Combine all ingredients except the oil and blend until smooth using a food processor or immersion blender.
  • Gradually add oil until you reach a smooth purée.
  • Season with salt and pepper to taste.
  • Spread the pesto over the cod and bake in the oven for about 12 minutes, or until cooked through.

Bacon Medallions

  • Cut the bacon slices in half.
  • Wrap the bacon around the dates, secure with toothpicks, and fry the rolls in butter until the bacon is crispy.

Tomato Salad

  • Slice the tomato and finely chop the red onion.
  • Drizzle with a little oil, and season with salt and pepper.

Serving

  • Serve the oven-baked cod on warm plates with bacon medallions, tomato salad, steamed asparagus, and boiled potatoes.
