Oven-baked Cod with Tomato and Basil

  • Preheat the oven to 150 °C.
  • Cut the cod fillet into pieces.
  • Peel and boil potatoes until tender in salted water, then slice them.
  • Slice shallots and garlic, and sauté in olive oil until the onion is soft.
  • Stir in tomato paste and sauté well.
  • Add canned tomatoes and olives, and let the sauce simmer for 5 minutes.
  • Season with cayenne pepper, salt, and pepper, then fold in basil leaves.
  • Layer the cod, potatoes, and sauce in a greased ovenproof dish, and bake in the oven for about 20 minutes.
  • Serve with bread on the side.
